Within the last five years Rolex has started to use ceramic in a lot of their models.  For example, the new Submariner with the Maxi Dial now has a ceramic bezel insert instead of plastic.   This makes it almost impossible to scratch the bezel.  Also, the new Deepsea Sea-Dweller has a ceramic bezel as well.

The most recent model that has added some ceramic to it is the Daytona.  The new model only comes in Rose gold but has a black ceramic bezel which is absolutely breathtaking.  Rumors are that Rolex will start introducing the ceramic bezel to the Daytona in its steel and two tone version as well.

In my opinion the best looking Rolex with a ceramic bezel is the pre-owned Rolex Submariner.  Whether you get the blue or black version, the ceramic just pulls the watch together.  Plastic is too cheap looking on a watch that has a retail price of $13,400.
